Ellis' resume includes starting the Nebaska nutrition department in 1994. He then served for eight years as the Huskers' Director of Performance Nutrition. Prior to becoming Nebraska's first full-time nutritionist, he served as a certified strength and conditioning coach during his undergraduate work at the University of Nebraska.
As the Huskers' new Director of Performance Nutrition, Ellis will work to develop and implement sports nutrition services for all student-athletes. He will also direct the nutrition efforts of the Nebraska football team, while also overseeing a team that will handle nutrition services and education for all of Nebraska's 24 sports.
“Dave Ellis is the leading professional in the sports performance nutrition field, and will be a great asset to Nebraska Athletics,” Scott Frost said in a statement from Nebraska. “Fueling our student-athletes correctly on a daily basis will be a key part of our success, not only in the football program, but across all of our sports. Nebraska is committed to being a leader in this area and having Dave on staff ensures that will be the case.”
Former Nebraska defensive end Jay Moore is also a fan of the hire.
"I think it's always good to get guys back in the program," Moore told Hail Varsity. "He's been a part of such great success in the past and he has a proven system. Let's just keep it going. As many of those guys that can come back, the better."
Ellis, who grew up in Omaha, Neb., and attended Burke High School, received his undergraduate degree in Human Nutrition from UNL in 1998. He also completed necessary graduate work to become a Registered Dietitian in 2000.
After departing Nebraska in 2001, he served as a consultant to teams at a variety of levels in several sports with his company Sports Alliance Inc. Ellis also accepted a consulting position with Major League Baseball and the MLBPA in 2016, managing the fueling related policies of the most recent MLB/PA Collective Bargaining Agreement.
